Strawberry Bruschetta

Strawberry and Goat Cheese Bruschetta
Usher in the warm days of spring and summer with Strawberry Bruschetta.


  • 1 1/2 cups sliced strawberries
  • 1 nectarine diced
  • 1 cup cherry tomatoes
  • 3 tablespoons sliced fresh basil
  • 1 shallot minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar
  • 1 tsp ground pepper
  • 1/4 tsp salt
  • French bread baguette
  • 1 goat cheese log, softened (you can replace with feta)


 Preheat oven to 375°.

Stir together strawberries, nectarine, quartered tomatoes, basil, minced shallot, olive oil, balsamic vinegar, sugar, freshly ground pepper, and salt.

Split baguette in half; cut each half crosswise into 4 equal pieces. Spread cut bread with goat cheese.

Place bread on baking sheet and bake 13 to 15 minutes or until thoroughly heated.

Top with strawberry mixture.
