Serves 6 – 250ml drinks
- 500 grams strawberries
- Juice of 1/2 lemon
- 1/2 cup basil leaves
- 1 cup sugar
- Carbonated water
Juice strawberries in a juicer or blender. If using a blender, pulse until smooth. Strain through a sieve, pushing juice through with a spatula.
Pour strawberry juice into a cup.
Add water to reach 1 cup if needed.
Pour into a saucepan with lemon juice, basil, and sugar. Heat until boiling. Simmer 5 minutes, stirring frequently.
Remove from heat and cool. Strain syrup through a sieve discarding solids.
To serve, spoon 2 tbls of syrup into a 250 ml glass, top with carbonated water, and stir.
Can refrigerate syrup for up to 1 week.
